Caribbean rum styles can taste remarkably different, even when the bottles look similar. The spirit may be clean and bright, rich with barrel character, bottled at a bold higher strength or made for slower sipping. The Original Rum Bum® core range brings four of those styles together: Silver, Gold, Overproof and Dark.
This collection is my love letter to the Caribbean. I believe great rum should taste like where it came from, with character shaped by the islands and the people behind it. Here is what makes each Rum Bum different and how to choose the right bottle for your glass.
Key Takeaways
- Silver Rum: clean, crisp and tropical, with pineapple, green banana and toasted coconut.
- Gold Rum: smooth and richer, with caramel, dried banana and warm vanilla.
- Overproof Rum: a full-flavoured 69% ABV rum with tropical fruit, molasses and a fiery finish.
- Dark Rum: deep and warming, with molasses richness, mature oak and spice.
My Connection to Caribbean Rum
My own love for Caribbean rum started many years ago when I moved to St Lucia as part of the opening team for a new hotel company, working as Executive Chef. I later worked at a small boutique property on Mustique and spent time with chefs and cooks in the island's private homes. We learnt about quality and local flavours from each other.
Those years gave me a real connection to Caribbean island life and what its food and drink stood for. That experience stayed with me when I created The Original Rum Bum®. After developing our limited-edition Signature White No. 1 Rum Blend, I wanted to create a permanent collection that showed more of what Caribbean rum could be.

What Makes Caribbean Rum Styles Different?
People often ask about the different types of rum and what separates one style from another. Colour can give you a clue, but it does not tell the whole story. How the rum is made, where it comes from and the time it spends maturing all influence the final flavour. Bottling strength matters too.
White or silver rum is often fresh and bright, making it a natural choice for cocktails. Gold rum usually brings more barrel character. Dark rum tends to offer deeper flavours, while overproof rum is bottled at a higher strength for greater intensity.
Those descriptions are useful starting points rather than strict rules. Two rums of the same colour may still taste completely different. If you would like a broader introduction, read our Caribbean Rum Guide.
Premium Caribbean Rum With No Added Sugar or Caramel Colouring
Across the core collection, I wanted the rum itself to do the talking. Every bottle is tropically matured, with no added sugar or caramel colouring. The approach may be relaxed, but the standards behind every bottle are anything but.
The Silver is charcoal filtered to remove its colour. This leaves it clean, bright and crisp without losing the Caribbean character of the blend.

Caribbean Premium Silver Rum: The Spirit of the Islands
37.5% ABV | Jamaica and the Dominican Republic | Aged up to three years
For the Silver, we blend a three-year-aged Jamaican rum with an unaged rum from the Dominican Republic. That touch of ageing allows more complexity to come through while keeping the rum smooth and refreshing.
On the nose, there is ripe pineapple and green banana, with gentle citrus behind them. The palate is clean and crisp, with tropical fruit, toasted coconut and a touch of Jamaican funk. Yum!
This is the bottle I reach for when I want a proper Daiquiri. It also works beautifully in a Mojito, with soda or in a Rum and Coke. Choose the Silver if you want a premium white rum with a bright Caribbean character.

Caribbean Premium Gold Rum: The Heart of the Islands
40% ABV | Trinidad, Guyana, Jamaica and Barbados | Rums aged from two to five years
For the Gold, I wanted an aged Caribbean rum blend with real substance and a little kick. We brought together four rums, each chosen for the character it adds.
Guyana brings the deep quality of Demerara, while Jamaica adds bold tropical fruit and funk. Trinidad keeps the blend smooth and light. Barbados brings classic balance and toasted oak.
It pours golden amber in the glass, with aromas of caramel and dried banana. Warm vanilla follows on the palate, leading into a dry finish with honey and citrus peel.
This is my choice for a Mai Tai. It also suits a Rum Old Fashioned or a good Rum Sour. Choose the Gold when you want extra richness without losing that easy Caribbean character.
Caribbean Premium Overproof Rum: The Rhythm of the Islands
69% ABV | Jamaica and the Dominican Republic | Aged up to three years
Overproof rum is bottled at a higher alcohol strength than standard rum, but it should bring more than heat. A good one delivers a bigger aroma and enough flavour to hold its own in a cocktail.
Our Overproof begins with the same Jamaican and Dominican blend as the Silver. It is bold and made for people who like their rum to stand up and be counted. In the Caribbean, overproof is not a gimmick. It is part of the tradition and the backbone of a proper Rum Punch. I should know. I drank quite a few during my years in the Caribbean.
The nose has robust sugar-cane notes with a sweet, earthy character. The palate is fiery with tropical fruit and overripe banana, with molasses underneath.
Use it as the strong component in a classic Rum Punch or give a favourite cocktail more intensity. If you are feeling brave, try a small pour neat and take your time with it.

Caribbean Premium Dark Rum: The Soul of the Islands
42% ABV | Trinidad, Barbados and Jamaica | Aged seven to twelve years
The Dark brings together the deep molasses richness of Trinidad with the elegant oak and balance of Barbados. Jamaica adds its bold, fruity power.
The rums have spent between seven and twelve years ageing, much of that time under the Caribbean sun. The barrels bring out vanilla and toffee, with warm spice running through the blend. It creates a dark rum with depth and a long, warming character.
Bottled at 42% ABV, it is strong enough to stand on its own but refined enough to sip slowly. Personally, I would enjoy it neat without ice. It will also make a cracking Rum Old Fashioned or a premium Dark 'n' Stormy.

Which Caribbean Rum Style Should You Choose?
Start with the way you enjoy drinking rum. Choose Silver for bright, refreshing cocktails. Pick Gold when you want more barrel richness, or Overproof when the rum needs to lead the drink. Dark is the natural choice for a slow pour or a richer classic cocktail.
If more than one sounds like your kind of rum, you have understood the point of the collection. Each bottle has a different job to do in your glass.
